Pricing and Packages

On full, halves, and quarters you customize how you want it cut, and pay for the processing, which will ave. $290, but can vary, especially if there is much special sausage, jerky, beef sticks, etc. I get paid on the hanging weight.  The hanging weight is the weight (typically around 650 lbs) right after slaughter.  After noting this weight, your beef will hang 10 days to dry age, and then be cutup, trimmed, and packaged.  This is different from commercial grocery store meat that is put on a styroform tray and vacume wrapped while still warm.  There is a fair amount of water in commercial meat that isn’t in dry aged meat.  Average pounds of highly boned meat taken home from a whole beef is 375 lbs; generally more for steers, less for heifers.  If you want bones left in where reasonable, then weight will be closer to 400 lbs and price will be the same since you pay both the processor and me on the hanging weight.  In comparison with most commercial grain fed cattle mine are genetically smaller.  Bragging rights have long selected for bigger weaning weights, and higher hanging weights.  Cattle that gain and finish well on grass are genetically smaller denser boned and smaller framed.  We like that.

Beef Bundles

We offer bundles for those with limited freezer space. We've created three packages and have included general package contents below, each package will vary slightly in the cuts it contains depending on availability of the cuts available. Most steak packages contain four steaks, roasts are generally 3-5 pounds and hamburger packages are generally a pound and a half.
