I sell mostly in 30 and 100 lb bundles. If you want to travel to the SD border to pick up a 1/4, 1/2 or whole, so you can have it custom cut, that is fine.  However, first time bulk buyers sometimes find the custom cut deal is a bit confusing. You pay on the hanging half (minus head, hide, and intestines), but the dry aging for 2 weeks eliminates a lot of that water weight that you see spattering in the pan in wet packed grocery meat.  And with boning and trimming, the weight of packaged meat is significantly less. It is also is different customer to customer depending on their choices, and that is why me and the locker charge on the hanging weight.

CUSTOM CUT to your specifications.  

Full beef           $2.10 / lb  hanging wt about 700 lbs (before boned, trimmed and wrapped)

Half beef          $2.20 / lb  hanging wt about 350 lbs (before boned, trimmed and wrapped)

Quarter beef     $2.30 / lb  hanging wt about 175 lbs (before boned, trimmed and wrapped)

Processed at USDA inspected Elkton Lockers; you pay for processing which is usually about 70 cents a pound on the hanging wt, but will be significantly higher with hamburger patties, specialty meats… sausage, beef sticks and such.  They do make fantastic brauts.
